If you are a Fan of Mini Pizzas then you should definitely try this! These cute mini Pizza Bites are Gluten Free and Low Carb and a pure delight!
Ingredients
Crust
1 small head cauliflower, cut into small florets (should yield about 3 cups once processed)
7.5 oz / 200 gr mozzarella cheese, shredded
½ teaspoon fine grain sea salt
½ teaspoon oregano
½ teaspoon ground black pepper
Topping
Shredded mozzarella cheese
Tomato slices
Fresh basil leaves (optional)
Directions
Preheat oven to 450°F (220°C) and place a rack in the middle. Line a baking sheet with parchment paper.
First cook the cauliflower florets.
While cooking the florets, I grate my own cheese you can fully go with 200r of grated cheese. I just love to mix different cheese types.

Drain the florets and try to chunk them into small pieces I use here a fork. Place the cauliflower rice in a tea towel and twist it to squeeze out as much moisture as you can. This is very important. The cauliflower rice needs to be dry. Otherwise you’ll end up with a mushy dough, not a crusty one.
Transfer the cauliflower rice to a mixing bowl and add , the cheese you can season it with oregano, sea salt and pepper, that tastes really good and mix it well.
Scoop one tablespoon of cauliflower mixture and drop onto the baking sheet. Pat into a thin round circle about 2-inches wide. Repeat with the remaining mixture.
Bake in the oven for 12 to 13 minutes until golden, the edges of the pizzas might be a bit charred.
Remove sheet from the oven and top each pizza with a large pinch of shredded mozzarella, a tomato slice.
let it roast for about 3 to 4 minutes.
Remove from the oven and let cool 5 minutes before serving.
