  • 240 gr almond flour
  • 9 tbsp stevia powder
  • 30gr protein powder
  • 3 tbsp Cocoa Powder ( unsweetened)
  • 2 tsp Baking Powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 180gr curd
  • 3 large Eggs
  • 10 drops stevia extract
  • 250ml heavy cream


  • 15 drops red gel food coloring (or 1 tbsp liquid food coloring) preheat the oven to 190°C In a medium bowl, whisk together the almond flour, stevia, protein powder, cocoa powder, baking powder, baking soda and salt, breaking up any lumps with the back of a fork.
  • Set aside. In a large bowl, beat curd and add eggs, stevia and beat until just combined.
  • Add half of almond flour mixture and beat until combined, then beat in heavy cream. Beat in remaining flour mixture until thoroughly combined.
  • Add food coloring and mix until color is uniform. Spoon batter into a baking pan. Bake the cake for 18 to 2o minutes.
  • Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
