
This filipino pancit is a stir-fry of chicken and vegetables combined with zoodles. This low carb chicken version replaces the rice noodles with zucchini zoodles. Totally my favorite dish.
As a half filipina I am used to eat my whole life asian food. From Pancit to Lumpias.
Since we’re living low carb it was really a long time ago that I had Pancit. My Mom always tries to cook low carb for us, but she never tried Zoodles – which is totally ok 🙂 So this will be one of the first times to show her a new recipe . buwahahhaahah.
anyways – I am pretty amazed what recipes you really can turn into a low carb Dish!
It’s just a Wok full of wonderful vegetables, chicken & prawns. I love it! And I am happy to present you one of my first filipino low carb recipes. My Food Library is full of other Recipes like cakes or Pizzas but never a filipino dish. So I try to create more of those. Enjoy this recipe and let me know what you think of this recipe.
